Misal is that comforting dish to us and after savoring and appreciating the smells, the warmth and the sights of a misal our first step after a squeeze of lime has been dipping a piece of bread in just the piping hot rassa/tarri/broth as the first step - passing on the habits 😂

Carrot and green chilies pickled in lime juice and Carrot and green chilies pickled in lime juice and achari spices (pickling spices in this case: mustard, fennel, cardamom, coriander seed) are a vibrant side many times to piping hot chole bhature. 

We tried a new technique which uses a chamber vaccum sealer. The chamber vaccum creates high pressure that breaks down the cell structure of vegetables making them absorb liquids like pickling juices or marinades instantly. Thus in this case pickling is instant. Think instant pickled cucumbers in vinegar for example. We applied the same technique to the gajar mirchi achar using @anovaculinary chamber vaccum sealer. 

Results were great, the flavors from pickling were vibrant and especially the carrots were well pickled but super juicy and crunchy. 

They went perfectly for a summer evenings chole bhature on the patio.
