Misal is that comforting dish to us and after savoring and appreciating the smells, the warmth and the sights of a misal our first step after a squeeze of lime has been dipping a piece of bread in just the piping hot rassa/tarri/broth as the first step - passing on the habits 😂

We soak chickpeas / garbanzo beans and cook them a We soak chickpeas / garbanzo beans and cook them at least once a week. We keep the cooking liquid simple - unfiltered water. If the garbanzo beans that you use are not very old then they are not that hard to cook without addition of baking soda. The cooking liquid obtained this way has cleaner and delightful flavors. It has a naturally gelatinous mouthfeel. This aquafaba liquid is used also as an egg replacer in many vegan recipes due to this quality. 

We started using this cooking broth as a sipping broth for our toddler and soon realized that we love it as much. While the broth is steaming hot, we add some ghee, some fine shredded carrots, some heeng, some turmeric, some sea salt and optionally some black salt to the bowl. Then we ladle the steaming broth. 

It cooks the carrot and melts the ghee and blooms and releases the golden aromas of turmeric and heeng. If the seasoning is perfect which is about balancing and the flavors stay cleaner from the quality of the broth this becomes a warm satisfying thing to sip. Optionally you can skip the fat or use olive oil, being some acid with lime or lemon or yuzu, and all these things work out differently but elegantly. Give this a try next time you boil your own chickpeas - and make it your own!
